Ingredients

For the Roast Beef

  • 3 lbs (1.4 kg) beef roast (top sirloin or ribeye)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

For the Yorkshire Pudding

  • 1 cup all-purpose flour
  • 1 cup milk
  • 3 large eggs
  • ΒΌ teaspoon salt
  • 2 tablespoons beef drippings or oil

For the Vegetables

  • 3 large potatoes, peeled and chopped
  • 3 carrots, peeled and cut into sticks
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup mushy peas (or frozen peas cooked and mashed)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Gravy

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
