Ingredients
For the Roast Beef
- 3 lbs (1.4 kg) beef roast (top sirloin or ribeye)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
For the Yorkshire Pudding
- 1 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- ΒΌ teaspoon salt
- 2 tablespoons beef drippings or oil
For the Vegetables
- 3 large potatoes, peeled and chopped
- 3 carrots, peeled and cut into sticks
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup mushy peas (or frozen peas cooked and mashed)
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the Gravy
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
