Step 1: Prepare the Eggplant
- Slice eggplant into long sheets. Lightly salt and let sit 10 minutes to release moisture.
- Pat dry, brush with olive oil, and air fry at 375°F (190°C) for 8–10 minutes until softened.
Step 2: Cook the Meat Sauce
- In a skillet, cook ground beef with onion until browned.
- Add garlic, salt, pepper, and Italian seasoning; cook 1 minute.
- Stir in marinara sauce and simmer 3–5 minutes.
Step 3: Mix the Ricotta Layer
- In a bowl, combine ricotta, egg, and 1 tbsp parsley.
Step 4: Assemble the Lasagna
- Grease an 8×8 dish that fits in your air fryer.
- Spread a thin layer of meat sauce on the bottom.
- Add a layer of eggplant slices.
- Spread ricotta mixture on top.
- Sprinkle mozzarella and Parmesan.
- Repeat until the dish is full, finishing with a thick cheese layer.
Step 5: Air Fry
- Preheat air fryer to 350°F (175°C).
- Air fry for 20–25 minutes until the cheese is golden, bubbly, and browned like the picture.
- Let rest 10 minutes, then cut into 9 squares.
