In a bowl, dissolve yeast in warm milk with sugar. Let sit for 5 minutes until foamy. Add salt, egg, and flour, mixing until a dough forms. Knead until smooth, cover, and refrigerate for 1 hour.
Roll the chilled dough into a rectangle. Place the cold butter between parchment paper and flatten into a square. Enclose butter in dough and roll out, then fold into thirds. Chill 30 minutes and repeat folding twice more.
Roll the laminated dough to about 1/2-inch thickness. Cut donut shapes using a round cutter. Place on parchment-lined trays and chill for 30 minutes.
Heat oil to 350°F (175°C). Fry cronut doughnuts for about 2–3 minutes per side until deep golden brown. Drain on paper towels.
Dust with powdered sugar or glaze while warm. Serve fresh for the best texture and flavor.
