Instructions
Preheat the oven to 400°F (200°C). Generously grease a muffin tin with cooking spray or butter.
Wash and peel the potatoes if desired. Slice them very thinly using a sharp knife or mandoline for even cooking.
In a large bowl, mix melted butter, olive oil, garlic, thyme, rosemary, salt, and black pepper. Add the potato slices and toss until well coated.
Stack the potato slices neatly into the prepared muffin cups, filling each cup to the top.
Bake for 40–45 minutes, or until the potato stacks are tender in the center and crispy and golden on the edges.
Let the stacks cool for 5 minutes, then carefully remove them from the muffin tin. Serve warm.
