Air Fryer Mediterranean stuffed eggplant

Instructions

  1. Preheat the air fryer to 380°F (195°C). Lightly brush the cut sides of the eggplant with olive oil and season with salt.
  2. Score the flesh of each eggplant half and air fry for 10 minutes until slightly tender.
  3. Scoop out some of the softened eggplant flesh, chop it, and add it to a bowl with onion, garlic, tomatoes, chickpeas, parsley, oregano, cumin, salt, and pepper.
  4. Fill the eggplant halves generously with the stuffing mixture and sprinkle feta on top if using.
  5. Return to the air fryer and cook for 12–15 minutes until the eggplant is fully tender and the top is lightly golden.
  6. Serve warm with a drizzle of olive oil and extra fresh herbs if desired.
