Instructions
- Preheat the air fryer to 380°F (195°C). Lightly brush the cut sides of the eggplant with olive oil and season with salt.
- Score the flesh of each eggplant half and air fry for 10 minutes until slightly tender.
- Scoop out some of the softened eggplant flesh, chop it, and add it to a bowl with onion, garlic, tomatoes, chickpeas, parsley, oregano, cumin, salt, and pepper.
- Fill the eggplant halves generously with the stuffing mixture and sprinkle feta on top if using.
- Return to the air fryer and cook for 12–15 minutes until the eggplant is fully tender and the top is lightly golden.
- Serve warm with a drizzle of olive oil and extra fresh herbs if desired.
