Instructions
- Preheat the air fryer to 350°F (175°C). Lightly grease silicone molds or an air fryer-safe mini muffin tray.
- In a blender or food processor, blend the cottage cheese until smooth.
- Add lemon juice, honey, vanilla extract, lemon zest, almond flour, baking powder, and salt. Blend until well combined.
- Gently fold in the blueberries by hand.
- Spoon the batter evenly into the molds, filling about 3/4 full.
- Air fry for 9–11 minutes, or until set and lightly golden on top.
- Let cool for 5 minutes before removing. Serve warm or chilled.
