  1. Preheat the air fryer to 350°F (175°C). Lightly grease silicone muffin molds.
  2. Blend the cottage cheese until smooth.
  3. In a bowl, whisk together blended cottage cheese, eggs, honey, vanilla, and melted butter if using.
  4. Stir in oat flour, baking powder, cinnamon, and salt until combined.
  5. Fold in diced apple gently.
  6. Spoon batter evenly into muffin molds, filling about 3/4 full.
  7. Air fry for 10–12 minutes, or until a toothpick inserted comes out clean.
  8. Let cool for 5 minutes before removing. Serve warm or store for meal prep.
