Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss the chicken pieces with olive oil, salt, pepper, and optional garlic or onion powder.
- Place the chicken in the air fryer basket in a single layer and cook for 10–12 minutes, shaking halfway, until lightly golden and cooked through.
- While the chicken cooks, mix cream of mushroom soup and chicken broth in an air fryer-safe dish or small baking pan.
- Add mushrooms to the sauce mixture and stir to combine.
- Once the chicken is cooked, transfer it into the sauce mixture and stir well.
- Place the dish into the air fryer and cook for an additional 8–10 minutes at 360°F (180°C), stirring once halfway, until the sauce thickens.
- If using peas or broccoli, stir them in during the last 5 minutes of cooking.
- Serve hot over rice, pasta, or noodles.
