Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Toss the chicken pieces with olive oil, salt, pepper, and optional garlic or onion powder.
  3. Place the chicken in the air fryer basket in a single layer and cook for 10–12 minutes, shaking halfway, until lightly golden and cooked through.
  4. While the chicken cooks, mix cream of mushroom soup and chicken broth in an air fryer-safe dish or small baking pan.
  5. Add mushrooms to the sauce mixture and stir to combine.
  6. Once the chicken is cooked, transfer it into the sauce mixture and stir well.
  7. Place the dish into the air fryer and cook for an additional 8–10 minutes at 360°F (180°C), stirring once halfway, until the sauce thickens.
  8. If using peas or broccoli, stir them in during the last 5 minutes of cooking.
  9. Serve hot over rice, pasta, or noodles.
