Instructions
- Cook the rotini pasta in salted water until al dente (7–8 minutes). Reserve 1 cup of pasta water, then drain.
- Preheat the air fryer to 375°F (190°C).
- In a skillet, cook shaved steak with diced onion over medium heat. Season with steak seasoning, oregano, salt, and pepper. Cook for about 5 minutes until browned.
- Drain excess fat, then add diced bell peppers and beef bouillon base. Cook another 5 minutes until peppers are tender.
- In a saucepan, heat half and half over medium-low heat. Add Velveeta gradually, stirring until fully melted and smooth.
- Combine cooked pasta with cheese sauce. Add reserved pasta water as needed to achieve a creamy consistency.
- In an air fryer-safe baking dish, layer half the pasta, half the steak mixture, and a layer of Monterey Jack cheese.
- Repeat layers and top with remaining cheese.
- Cover loosely with foil and air fry for 10–12 minutes until heated through.
- Remove foil and cook an additional 3–5 minutes until cheese is melted and slightly golden.
- Garnish with parsley and serve hot.
