Instructions

  1. Cook the rotini pasta in salted water until al dente (7–8 minutes). Reserve 1 cup of pasta water, then drain.
  2. Preheat the air fryer to 375°F (190°C).
  3. In a skillet, cook shaved steak with diced onion over medium heat. Season with steak seasoning, oregano, salt, and pepper. Cook for about 5 minutes until browned.
  4. Drain excess fat, then add diced bell peppers and beef bouillon base. Cook another 5 minutes until peppers are tender.
  5. In a saucepan, heat half and half over medium-low heat. Add Velveeta gradually, stirring until fully melted and smooth.
  6. Combine cooked pasta with cheese sauce. Add reserved pasta water as needed to achieve a creamy consistency.
  7. In an air fryer-safe baking dish, layer half the pasta, half the steak mixture, and a layer of Monterey Jack cheese.
  8. Repeat layers and top with remaining cheese.
  9. Cover loosely with foil and air fry for 10–12 minutes until heated through.
  10. Remove foil and cook an additional 3–5 minutes until cheese is melted and slightly golden.
  11. Garnish with parsley and serve hot.
