Instructions

  1. Preheat the air fryer to 320°F (160°C) and lightly grease silicone muffin molds.
  2. In a blender or food processor, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth.
  3. In a bowl, mix rolled oats, almond flour, and baking powder.
  4. Pour the blended mixture into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly into muffin molds, filling about 3/4 full.
  7. Air fry for 13–15 minutes, or until the tops are golden and a toothpick comes out clean.
  8. Let cool for 5 minutes before removing. Serve warm or store for later.
