Instructions
- Preheat the air fryer to 320°F (160°C) and line a small air fryer-safe baking dish with parchment paper.
- Blend the cottage cheese until smooth for a creamier texture (optional but recommended).
- In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup if using.
- Stir in almond flour, cinnamon, salt, and chopped pecans until fully combined.
- Pour the batter into the prepared dish and smooth the top. Sprinkle extra pecans on top if desired.
- Place in the air fryer and cook for 20–25 minutes, or until set and lightly golden.
- Remove and allow to cool completely before slicing into 8 bars.
- Serve as is or drizzle with maple syrup or yogurt glaze for extra flavor.
