Instructions

  1. Preheat the air fryer to 320°F (160°C) and line a small air fryer-safe baking dish with parchment paper.
  2. Blend the cottage cheese until smooth for a creamier texture (optional but recommended).
  3. In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup if using.
  4. Stir in almond flour, cinnamon, salt, and chopped pecans until fully combined.
  5. Pour the batter into the prepared dish and smooth the top. Sprinkle extra pecans on top if desired.
  6. Place in the air fryer and cook for 20–25 minutes, or until set and lightly golden.
  7. Remove and allow to cool completely before slicing into 8 bars.
  8. Serve as is or drizzle with maple syrup or yogurt glaze for extra flavor.
