Instructions
- Preheat the air fryer to 360°F (180°C) and lightly grease an air fryer-safe baking dish.
- Heat olive oil in a pan and sauté mushrooms for 3–4 minutes until softened and slightly golden.
- In a bowl, whisk together eggs, milk, salt, and black pepper until well combined.
- Layer half of the sliced potatoes in the baking dish.
- Add shredded chicken, sautéed mushrooms, and cherry tomatoes evenly over the potatoes.
- Sprinkle a layer of grated cheese on top.
- Add the remaining potato slices and pour the egg mixture evenly over everything.
- Top with the remaining cheese.
- Place in the air fryer and cook for 22–25 minutes until set, golden, and slightly crispy on top.
- Let cool for 5–10 minutes before slicing and serving.
