Instructions
- Preheat the air fryer to 390°F (200°C).
- In a bowl, mix chopped shrimp, cabbage, cilantro, spring onions, sesame oil, and soy sauce until well combined.
- Dip each rice paper wrapper in warm water for about 5 seconds until pliable, then lay flat.
- Place about 2 tablespoons of filling in the center, fold in the sides, and roll tightly.
- Place rolls seam-side down in the air fryer basket and spray generously with cooking spray.
- Air fry for 10–12 minutes, flipping halfway, until golden and crispy.
- Meanwhile, whisk together Greek yogurt, sriracha, garlic, lime juice, honey, and salt until smooth.
- Slice rolls diagonally and serve with garlic-sriracha crema on the side.
- Garnish with sesame seeds, extra spring onions, and lime wedges.
