Instructions

  1. Preheat the air fryer to 390°F (200°C).
  2. In a bowl, mix chopped shrimp, cabbage, cilantro, spring onions, sesame oil, and soy sauce until well combined.
  3. Dip each rice paper wrapper in warm water for about 5 seconds until pliable, then lay flat.
  4. Place about 2 tablespoons of filling in the center, fold in the sides, and roll tightly.
  5. Place rolls seam-side down in the air fryer basket and spray generously with cooking spray.
  6. Air fry for 10–12 minutes, flipping halfway, until golden and crispy.
  7. Meanwhile, whisk together Greek yogurt, sriracha, garlic, lime juice, honey, and salt until smooth.
  8. Slice rolls diagonally and serve with garlic-sriracha crema on the side.
  9. Garnish with sesame seeds, extra spring onions, and lime wedges.
