Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a large bowl, mix together the cottage cheese, pizza sauce, and mozzarella cheese until well combined.
- Add the whole wheat flour, baking powder, Italian seasoning, salt, and pepper to the mixture and stir until the dry ingredients are incorporated.
- Fold in the mini pepperoni, chopped bell peppers, and mushrooms.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden.
- Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm.
