Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat and sauté the diced onion until translucent.
  3. Add the ground beef to the skillet, cook until browned, then drain excess fat.
  4. Season the beef with salt and pepper, then stir in the shredded cheddar and mozzarella cheeses until melted and well combined. Remove from heat.
  5. Lay each tortilla flat, place a scoop of the beef mixture in the center, and fold the edges over to form a pocket.
  6. Place filled tortillas on the prepared baking sheet, seam side down.
  7. Bake for 15-20 minutes, or until the tortillas are golden brown and crispy.
  8. Garnish with chopped parsley before serving.
