- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat and sauté the diced onion until translucent.
- Add the ground beef to the skillet, cook until browned, then drain excess fat.
- Season the beef with salt and pepper, then stir in the shredded cheddar and mozzarella cheeses until melted and well combined. Remove from heat.
- Lay each tortilla flat, place a scoop of the beef mixture in the center, and fold the edges over to form a pocket.
- Place filled tortillas on the prepared baking sheet, seam side down.
