- Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
- Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.
- In a skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Season with salt and pepper. Set aside.
- Spread 1/4 cup of Alfredo sauce over each lasagna noodle. Place 3-4 shrimp on top of the sauce and sprinkle with mozzarella cheese.
- Roll up each lasagna noodle tightly and place seam side down in the prepared baking dish.
- Pour remaining Alfredo sauce over the roll-ups and sprinkle with Parmesan and remaining mozzarella cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden brown.
- Garnish with chopped parsley before serving.
