Instructions
- Preheat your oven to 200°C (400°F).
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, cook the pancetta or bacon over medium heat until crispy. Add the minced garlic and cook for an additional minute. Remove from heat.
- In a mixing bowl, whisk together the eggs, Parmesan cheese, and double cream. Season with salt and pepper.
- In a large baking dish, combine the cooked pasta, pancetta, and cream mixture. Stir until everything is well combined.
- Top the pasta with shredded mozzarella cheese.
- Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
- Garnish with chopped parsley before serving.
