Instructions

  1. Heat a skillet over medium heat and add a bit of olive oil.
  2. Place a tortilla in the skillet, and spread about 2 tablespoons of marinara sauce evenly over it.
  3. Sprinkle 1/2 cup of shredded mozzarella cheese over the sauce.
  4. Add a layer of pepperoni slices on top of the cheese.
  5. Sprinkle a pinch of oregano and parsley for extra flavor.
  6. Top with another tortilla and gently press down to secure the filling.
  7. Cook for about 3-4 minutes or until the bottom tortilla is golden and crispy.
  8. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes.
  9. Remove from the skillet and repeat the process with the remaining tortillas and fillings.
  10. Cut each quesadilla into quarters and serve with extra marinara sauce for dipping.
