- In a large mixing bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
- Heat oil in a deep pan to 350°F (175°C).
- Using a small scoop or a spoon, gently drop tablespoon-sized amounts of batter into the hot oil.
- Fry the donut holes in batches for about 2-3 minutes, turning occasionally, until golden brown.
- Remove them with a slotted spoon and drain on a paper towel-lined plate.
- In a shallow bowl, combine the sugar and cinnamon. Roll the warm donut holes in the mixture until fully coated.
