Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add sliced chicken breasts to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the garlic until fragrant, about 1 minute.
- Add the sliced mushrooms and cook until they are tender and browned, about 5 minutes.
- Return the chicken to the skillet. Stir in the soy sauce, honey, and black pepper. Cook for an additional 2-3 minutes, until the sauce thickens slightly and coats the chicken and mushrooms.
- Season with salt to taste, and serve hot.

- Make sure not to overcrowd the pan when browning the chicken for even cooking.
