Instructions

  1. In a mixing bowl, whisk the chilled heavy cream until it starts to thicken.
  2. Add sweetened condensed milk and vanilla extract. Continue whisking until well combined and peaks form.
  3. In a square glass dish, arrange a layer of graham crackers at the bottom.
  4. Spread a layer of the cream mixture over the graham crackers, then add a layer of diced mangoes.
  5. Repeat the layers until all ingredients are used, ending with a layer of cream and topped with mangoes. Sprinkle sliced pistachios on top, if using.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
  7. Before serving, cut into squares and enjoy!
