Instructions
- In a mixing bowl, whisk the chilled heavy cream until it starts to thicken.
- Add sweetened condensed milk and vanilla extract. Continue whisking until well combined and peaks form.
- In a square glass dish, arrange a layer of graham crackers at the bottom.
- Spread a layer of the cream mixture over the graham crackers, then add a layer of diced mangoes.
- Repeat the layers until all ingredients are used, ending with a layer of cream and topped with mangoes. Sprinkle sliced pistachios on top, if using.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
- Before serving, cut into squares and enjoy!
