Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper, then cut a pocket into each breast by slicing horizontally.
- In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat and allow to cool slightly.
- In a bowl, combine the cooked spinach, cottage cheese, half of the Parmesan cheese, and Italian seasoning. Mix well.
- Stuff each chicken breast with the spinach and cottage cheese mixture. Secure with toothpicks if necessary.
- In an oven-safe skillet, melt the butter over medium-high heat and sear the stuffed chicken breasts on each side for about 3-4 minutes until golden brown.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is fully cooked through.
- Remove the chicken from the oven, sprinkle with the remaining Parmesan cheese and fresh parsley for garnish, and serve hot.
