Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper, then cut a pocket into each breast by slicing horizontally.
  3. In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant, about 1 minute.
  4. Add the chopped spinach to the skillet and cook until wilted. Remove from heat and allow to cool slightly.
  5. In a bowl, combine the cooked spinach, cottage cheese, half of the Parmesan cheese, and Italian seasoning. Mix well.
  6. Stuff each chicken breast with the spinach and cottage cheese mixture. Secure with toothpicks if necessary.
  7. In an oven-safe skillet, melt the butter over medium-high heat and sear the stuffed chicken breasts on each side for about 3-4 minutes until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is fully cooked through.
  9. Remove the chicken from the oven, sprinkle with the remaining Parmesan cheese and fresh parsley for garnish, and serve hot.

Chef’s Tips

  • Ensure the spinach-cottage cheese mixture is cool before stuffing the chicken to help retain the filling inside.
  • Feel free to customize the filling with other herbs or spices for added flavor.
  • For a crispier topping, broil the chicken for the last 2 minutes of cooking in the oven.
