Instructions
- Preheat your oven to 350°F (180°C). Grease a rectangular baking pan with sunflower oil or butter.
- In a large bowl, beat the eggs and mix in the yogurt, water, and crumbled cheese. Stir until well combined.
- Lay a sheet of phyllo dough in the baking pan and brush lightly with oil or butter. Lay another sheet on top and repeat the process until you have 4 layers.
- Pour a portion of the egg and cheese mixture over the phyllo layers. Spread evenly to cover.
- Repeat the layering process with phyllo and the mixture until all are used, finishing with a layer of the mixture on top.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and crispy.
- Allow to cool slightly before cutting into squares and serving warm or at room temperature.
Chef’s Tips
- Let the banitsa cool before cutting to prevent it from falling apart.
- For extra flavor, add a little bit of finely chopped fresh dill to the cheese mixture.
- Phyllo dough can dry out quickly; keep it covered with a damp towel as you work.
