Instructions

  1. Preheat your oven to 350°F (180°C). Grease a rectangular baking pan with sunflower oil or butter.
  2. In a large bowl, beat the eggs and mix in the yogurt, water, and crumbled cheese. Stir until well combined.
  3. Lay a sheet of phyllo dough in the baking pan and brush lightly with oil or butter. Lay another sheet on top and repeat the process until you have 4 layers.
  4. Pour a portion of the egg and cheese mixture over the phyllo layers. Spread evenly to cover.
  5. Repeat the layering process with phyllo and the mixture until all are used, finishing with a layer of the mixture on top.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and crispy.
  7. Allow to cool slightly before cutting into squares and serving warm or at room temperature.

Chef’s Tips

  • Let the banitsa cool before cutting to prevent it from falling apart.
  • For extra flavor, add a little bit of finely chopped fresh dill to the cheese mixture.
  • Phyllo dough can dry out quickly; keep it covered with a damp towel as you work.
