- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add garlic and onion powder, sauté until fragrant.
- Add broccoli to the skillet and cook for about 5 minutes until bright green and slightly tender.
- In a large mixing bowl, combine shredded chicken, cooked broccoli, mozzarella cheese, and cheddar cheese.
- In a saucepan, combine heavy cream and chicken broth. Let it simmer, stirring occasionally until it slightly thickens.
- Pour the cream mixture over the chicken and broccoli, stirring to combine. Season with salt and pepper to taste.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley if desired.
- Serve warm and enjoy your delicious low-carb meal!
