Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the ground chicken with garlic powder, onion powder, salt, and pepper until well combined.
- Divide the chicken mixture into four equal parts and flatten them into thin patties on parchment paper.
- On two of the patties, layer mozzarella cheese, sun-dried tomatoes, spinach, red onion, and olives.
- Place the remaining patties over the top of the filled patties, sealing the edges by pinching them together.
- Place the stuffed chicken patties on a baking sheet lined with parchment paper.
- Brush them with olive oil, and bake in the preheated oven for 20 minutes or until fully cooked through.
- Once done, remove from the oven and let them cool slightly before serving.
Chef’s Tips
- For a spicier kick, add a pinch of red pepper flakes to the chicken mixture.
- Ensure the patties are evenly sealed to prevent the cheese filling from leaking out during baking.
- Serve with a side salad or your favorite dipping sauce for extra flavor.
