Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the ground chicken with garlic powder, onion powder, salt, and pepper until well combined.
  3. Divide the chicken mixture into four equal parts and flatten them into thin patties on parchment paper.
  4. On two of the patties, layer mozzarella cheese, sun-dried tomatoes, spinach, red onion, and olives.
  5. Place the remaining patties over the top of the filled patties, sealing the edges by pinching them together.
  6. Place the stuffed chicken patties on a baking sheet lined with parchment paper.
  7. Brush them with olive oil, and bake in the preheated oven for 20 minutes or until fully cooked through.
  8. Once done, remove from the oven and let them cool slightly before serving.
