Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling: In a large bowl, combine the chopped broccoli, cheddar cheese, cream cheese, garlic powder, salt, and pepper. Mix until well combined.
- Flatten the chicken breasts: Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet until about 1/4 inch thick.
- Spread a generous amount of the broccoli cheddar mixture onto each chicken breast.
- Carefully roll up the chicken breasts tightly and secure them with toothpicks.
- Place the rolled chicken breasts seam side down in a baking dish. Drizzle with olive oil and sprinkle with salt and pepper to taste.
- Bake in the preheated oven for 30 minutes, or until the chicken is fully cooked and the juices run clear.
- Remove from oven and let rest for a few minutes. Remove toothpicks, slice the rollups, and garnish with fresh parsley before serving, if desired.
