Instructions
- In a large bowl, whisk together olive oil, lemon juice, Greek yogurt, garlic, oregano, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour or overnight for best flavor.
- Preheat grill to medium-high heat. Thread marinated chicken cubes onto the soaked skewers.
- Grill the skewers for 10-15 minutes, turning occasionally until chicken is cooked through and has nice grill marks.
- Serve the chicken souvlaki over a bed of cooked rice. Garnish with sliced cucumbers, red onions, and tomatoes.
