Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut each sheet of puff pastry into rectangles (about 3×2 inches). Place them on the prepared baking sheet.
  3. Bake for 15 minutes or until golden brown and puffed. Remove from the oven and let them cool completely.
  4. In a medium bowl, whip the heavy cream with the vanilla extract and 2 tablespoons of powdered sugar until stiff peaks form.
  5. Using a serrated knife, carefully slice the baked puff pastries in half horizontally.
  6. Spread a layer of sliced strawberries on the bottom half of each pastry.
  7. Pipe or spoon the whipped cream over the strawberries.
  8. Place the top half of the pastry over the cream and gently press down.
  9. Dust the tops with additional powdered sugar before serving.
