Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the cottage cheese, eggs, granulated sugar, vanilla extract, and 1 teaspoon of cinnamon. Mix until well blended.
- Fold the diced apples into the cottage cheese mixture.
- Line the bottom of the baking dish with one sheet of puff pastry, ensuring it covers the entire bottom.
- Spread the cottage cheese and apple mixture evenly over the pastry in the baking dish.
- Place the second sheet of puff pastry over the top of the filling.
- In a small bowl, mix the brown sugar and 1 teaspoon of cinnamon, then sprinkle this mixture over the top of the pastry.
- Drizzle the melted butter evenly over the cinnamon sugar topping.
- Bake for 45 minutes or until the top is golden brown and the filling is set.
- Allow to cool before cutting into bars and serving.
