- In a bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Refrigerate.
- In a separate bowl, beat the cream cheese and granulated sugar until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- In each serving glass, layer a spoonful of the cream mixture, then a layer of raspberries. Repeat the layers until the glasses are filled, ending with a layer of cream.
- Top each parfait with a fresh raspberry and a sprig of mint, if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
