Instructions

  1. In a bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Refrigerate.
  2. In a separate bowl, beat the cream cheese and granulated sugar until smooth and creamy.
  3. Gently fold the whipped cream into the cream cheese mixture until combined.
  4. In each serving glass, layer a spoonful of the cream mixture, then a layer of raspberries. Repeat the layers until the glasses are filled, ending with a layer of cream.
  5. Top each parfait with a fresh raspberry and a sprig of mint, if desired.
  6. Chill in the refrigerator for at least 30 minutes before serving.
