- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion, red bell pepper, and garlic, and sauté until softened.
- Add the ground sausage to the skillet and cook until browned. Drain excess fat.
- Stir in marinara sauce and let it simmer for 5 minutes. Season with salt and pepper.
- In a baking dish, arrange a layer of zucchini slices, followed by the sausage mixture, and top with a layer of mozzarella and cheddar cheeses.
- Repeat the layering process, finishing with a layer of cheese on top.
- Bake in the preheated oven for 30-40 minutes or until the cheese is bubbly and golden brown.
- Let the casserole sit for a few minutes before serving. Garnish with fresh basil if desired.
