Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat and set aside to cool slightly.
- In a bowl, mix the cooled spinach with cream cheese, lemon juice, and lemon zest until well combined. Season with salt and pepper to taste.
- Make a slit in each salmon fillet to create a pocket. Stuff the fillets with the spinach and cream cheese mixture.
- Place stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Bake in the preheated oven for 18-20 minutes, or until salmon is cooked through and flaky.
- Serve with lemon wedges and enjoy!
