Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat and set aside to cool slightly.
  3. In a bowl, mix the cooled spinach with cream cheese, lemon juice, and lemon zest until well combined. Season with salt and pepper to taste.
  4. Make a slit in each salmon fillet to create a pocket. Stuff the fillets with the spinach and cream cheese mixture.
  5. Place stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the preheated oven for 18-20 minutes, or until salmon is cooked through and flaky.
  7. Serve with lemon wedges and enjoy!

Chef’s Tips

  • Choose salmon fillets that are uniform in size for even cooking.
  • Make sure to not overstuff the fillets to prevent the filling from spilling out during cooking.
  • For extra flavor, add herbs like dill or parsley to the filling.
