Instructions
- Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet.
- In a small pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp to the pan and cook for 2 minutes on each side, or until they are pink and cooked through. Season with salt and pepper. Remove from heat.
- Spoon melted garlic and oil over each baguette slice. Layer on a generous amount of mozzarella cheese.
- Place one shrimp on top of each cheese-covered baguette slice.
- Bake the toasts in the oven for 8-10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, sprinkle with chopped parsley, and serve immediately.
