- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the halved fingerling potatoes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Arrange the potatoes cut side up on the prepared baking sheet. Bake in the preheated oven for 25 minutes.
- Remove the baking sheet from the oven and sprinkle grated cheese over the potatoes.
- Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Once cooked, remove from the oven and sprinkle with fresh parsley before serving.
