Instructions
- Preheat your air fryer to 320°F (160°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Alternate adding the flour mixture and sour cream to the butter mixture, starting and ending with the flour, until just combined.
- Gently fold in the blueberries.
- In a small bowl, beat the cream cheese and powdered sugar until smooth.
- Pour half of the batter into a greased loaf pan that fits into your air fryer. Layer with cream cheese mixture, then top with the remaining batter.
- Carefully place the pan into the air fryer basket.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
