  • 2 tbsp olive oil
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 large onion, roughly chopped
  • 3-4 cloves garlic, minced
  • 1-inch piece fresh ginger, grated (optional)

  • 1 tsp ground cumin
