- 2 tbsp olive oil
- 1.5 lbs boneless, skinless chicken thighs
- 1 large onion, roughly chopped
- 3-4 cloves garlic, minced
- 1-inch piece fresh ginger, grated (optional)
- 2 tbsp tomato paste
- 1 tbsp sweet paprika
- 1 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/4 tsp cayenne pepper (optional, for a kick)
- Salt and freshly ground black pepper to taste
- 1 (28 oz) can crushed tomatoes
- 2 cups chicken broth
- 1 lb small new potatoes, scrubbed and halved (or larger potatoes cut into 1.5-inch chunks)
- 3 medium carrots, peeled and sliced into 1/2-inch rounds
- 1 cup frozen peas
- 1 cup fresh or frozen green beans, trimmed and halved
- 1/4 cup fresh parsley or cilantro, chopped (for garnish/stir-in)
