- Preheat the air fryer to 180°C (356°F).
- In a bowl, mix the sausage meat with the sage stuffing mix, fresh sage, salt, and pepper.
- Roll out the puff pastry sheet on a floured surface.
- Spread the sausage mixture evenly over the pastry, leaving a border on one long edge.
- Brush the border with beaten egg, then roll the pastry tightly to form a log.
- Cut into 12 equal pieces and place in the air fryer basket.
- Brush the tops with more egg for a golden finish.
- Cook for 15 minutes or until the pastry is golden and the sausage is cooked through.
- Allow to cool slightly before serving.

- For extra flavor, add 1 teaspoon of dried thyme to the sausage mixture.
- Serve with mustard or apple sauce for a tasty dip.
