Instructions

  1. In a bowl, crumble the Weetabix biscuits and pour in the milk. Let them soak for about 5 minutes until softened.
  2. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Mix well.
  3. Once the Weetabix is soft, add the brown sugar, vegetable oil, and vanilla extract to it. Mix until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  5. Fold in the raisins gently into the batter.
  6. Preheat your air fryer to 320°F (160°C).
  7. Pour the batter into a greased cake pan that fits your air fryer basket.
  8. Place the pan in the air fryer basket and cook for 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Once cooked, remove the pan from the air fryer carefully and let it cool for a few minutes before slicing.

  • Feel free to add nuts or other dried fruits for added texture and flavor.
  • For a lighter cake, you can substitute half of the all-purpose flour with whole wheat flour.
