- Preheat the air fryer to 375°F (190°C).
- In a mixing bowl, whisk together the ground beef, black pepper, salt, breadcrumbs, garlic powder, ketchup, BBQ sauce, and Worcestershire sauce until fully combined.
- Divide the mixture into eight uniform portions, forming cupcake-sized mounds.
- Wrap each meat mound with a slice of turkey bacon and place them in a muffin tin.
- Air fry the meatloaf cupcakes for about 25 minutes or until the bacon is crispy and the meat is cooked through.
- While the cupcakes are cooking, heat the prepared mashed potatoes on the stove or in the microwave.
- Once the cupcakes are done, allow them to cool for about five minutes before handling.
- Using a piping bag or spoon, pipe the creamy mashed potatoes on top of each meatloaf cupcake to create a ‘frosting’ effect.
- Drizzle BBQ sauce over the mashed potato frosting and garnish with fresh parsley, if desired.
- Serve hot and enjoy!
