Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini with salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much liquid as possible.
- In a separate bowl, mix the squeezed zucchini, cottage cheese, breadcrumbs, Parmesan cheese, garlic powder, onion powder, pepper, and dried oregano until well combined.
- Using a spoon or your hands, form small patties of the mixture and place them on the lined baking sheet.
- Spray the tops of the patties with olive oil before baking.
- Bake in the preheated oven for about 20-25 minutes, or until the edges are golden and crispy.
- Allow the chips to cool slightly before serving. Enjoy as a healthy snack or appetizer!
