Instructions
• Preheat the air fryer to 200°C (400°F).
• Slice each chicken breast in half lengthwise to create four thin cutlets.
• Pat the chicken dry with paper towels.
• In a shallow bowl, combine the gluten-free breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, oregano, salt, and black pepper.
• Place the beaten eggs in a separate shallow bowl.
• Dip each chicken cutlet into the eggs, then coat evenly with the breadcrumb mixture, pressing gently to help it stick.
• Lightly spray both sides of the chicken with cooking spray.
• Arrange the chicken in a single layer in the air fryer basket, leaving space between each piece.
• Air fry for 6 minutes.
• Flip the chicken and spray lightly again if needed.
• Continue cooking for another 5–6 minutes, or until golden brown and the internal temperature reaches 74°C (165°F).
• Let the chicken rest for 5 minutes before serving.
