• Line 6 silicone muffin cups with paper liners, or use silicone cups without liners.
• In a large bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
• Add the caster sugar and self-rising flour.
• Mix gently until just combined—do not overmix.
• Spoon about 1 tablespoon of batter into each prepared muffin cup.
• Add 1 teaspoon of jam or Nutella to the center of each.
• Cover the filling with another tablespoon of batter.
• Place the muffin cups into the air fryer basket.
• Air fry at 160°C (320°F) for 17 minutes. Do not preheat the air fryer.
• Avoid opening the air fryer during cooking to prevent the duffins from sinking.
• While still warm, brush the tops with melted butter.
• Sprinkle generously with granulated sugar.
• Let cool for a few minutes before serving, as the filling will be very hot.
