Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped shrimp, cream cheese, mozzarella cheese, parsley, lemon juice, salt, and pepper. Mix until well blended.
- Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.
- Spoon about 2 tablespoons of the shrimp mixture onto the center of each square.
- Fold the pastry over to create a triangle and seal the edges by pressing with a fork. Ensure there are no gaps for the filling to leak out.
- Place the hand pies on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
- Bake for 25-30 minutes, or until the pies are golden brown and puffed.
