Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt, pepper, and garlic powder. Cook until pink and opaque. Remove from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
  5. Gradually add milk and cream, whisking continuously until smooth. Bring to a simmer and cook until thickened.
  6. Remove from heat and stir in cheddar, mozzarella, and half of the Parmesan until melted. Season with additional salt and pepper, if needed.

  8. Sprinkle remaining Parmesan cheese on top. Bake for 20 minutes, or until bubbly and golden.
  9. Garnish with chopped chives before serving.
