Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cook the macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt, pepper, and garlic powder. Cook until pink and opaque. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
- Gradually add milk and cream, whisking continuously until smooth. Bring to a simmer and cook until thickened.
- Remove from heat and stir in cheddar, mozzarella, and half of the Parmesan until melted. Season with additional salt and pepper, if needed.
- Combine macaroni, cooked shrimp, and cheese sauce. Mix well and transfer to the prepared baking dish.
- Sprinkle remaining Parmesan cheese on top. Bake for 20 minutes, or until bubbly and golden.
- Garnish with chopped chives before serving.
