Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the pastry dough sheets on a lightly floured surface and cut out circles using a round cutter.
  3. Place the pastry circles onto the prepared baking sheet.
  4. In a bowl, combine the sliced sausage, diced red and green bell peppers, grated cheddar cheese, and spices (salt, black pepper, red pepper flakes, dried mint, thyme).
  5. Spoon a small amount of the mixture onto each pastry circle, leaving a small border around the edges.
  6. Gently fold the edges of the pastry slightly upwards to form a shallow cup.
  7. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crispy.
