Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken breasts with salt and pepper. Add them to the skillet and sear for 5-7 minutes on each side, until golden brown. Remove chicken from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.
  6. Stir in the Boursin cheese until melted and combined with the broth.
  7. Add in the heavy cream and fresh thyme, stirring until well mixed.
  8. Return the chicken to the skillet, spooning the sauce over the top.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
  10. Let the dish rest for a few minutes, garnish with extra thyme, and serve hot.

  • For an extra flavor boost, marinate the chicken in some herbs and lemon juice for a couple of hours before cooking.
  • Feel free to substitute Boursin cheese with a similar herb-infused cream cheese if needed.
