Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season the chicken breasts with salt and pepper. Add them to the skillet and sear for 5-7 minutes on each side, until golden brown. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.
- Stir in the Boursin cheese until melted and combined with the broth.
- Add in the heavy cream and fresh thyme, stirring until well mixed.
- Return the chicken to the skillet, spooning the sauce over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
- Let the dish rest for a few minutes, garnish with extra thyme, and serve hot.
Chef’s Tips
- For an extra flavor boost, marinate the chicken in some herbs and lemon juice for a couple of hours before cooking.
- Feel free to substitute Boursin cheese with a similar herb-infused cream cheese if needed.
- Serve with a side of roasted vegetables or mashed potatoes to soak up the delicious sauce.
